On Crete, the common name for Mountain Tea is Malhotra. Just about every region of Greece has its own name for the tea, such as Olympos tea and Parnassos tea, reflecting the name of the mountain where it grows. The most common English name other than Mountain Tea is Shepherd's Tea because Greek shepherds use the plants to make a brewed tea while tending their flocks high in the hills.

Sideritis Scardica is indigenous on Mount Olympus.  
Sideritis Syriaca can be found on the island of Crete. Specifically in Psiloritis and Leyka Ori at elevations 800 until 2000 feet. 
TO BREW:

Bring 2 cups of water to a boil, add a heaping TBSP of dried leaves, flowers, and stems to the pan for every 2 cups of water. Cover and steep for 10 minutes. Enjoy with lemon or honey.
